These Philly Cheesesteak Stuffed Peppers are a low-carb twist on a classic comfort food, loaded with juicy steak, melty provolone, and sautéed onions—perfect for a delicious, protein-packed dinner.
Ingredients
4 large green bell peppers
1 tablespoon olive oil
1 medium yellow onion, thinly sliced
2 garlic cloves, minced
1 pound ribeye steak, thinly sliced (or use lean ground beef as a substitute)
1 tablespoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon black pepper
4 slices provolone cheese
Fresh parsley, chopped for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C)
Cut the tops off the bell peppers and remove the seeds and membranes
Heat olive oil in a skillet over medium heat and sauté onions and garlic until softened
Add the sliced steak to the pan and cook until browned, then season with Worcestershire sauce, salt, and pepper
Stuff each pepper with the steak mixture and place a slice of provolone on top
Arrange the peppers in a baking dish and bake for 20–25 minutes or until the cheese is melted and bubbly
Remove from the oven, garnish with fresh parsley if desired, and serve hot

Swap ribeye for lean ground beef if you want to reduce cost without losing flavor
Add mushrooms or sautéed spinach to the filling for extra nutrients
Use red or yellow bell peppers for a slightly sweeter flavor
